NS1's Favorite Memorial Day Cookout Recipes

As the days get warmer, the thoughts of late summer nights with family and friends around the grill come to mind; this is a welcome distraction for us in the Internet infrastructure space, as sometimes the nights at the office run a little longer than they should. Memorial Day signifies not only the beginning of summer for us, but also gives us a somber reminder of why we celebrate. We at NS1 want to extend our gratitude for the sacrifices of all members of our nation’s Armed Services. Whether these sacrifices were time spent away from family to defend freedom, or paying the ultimate sacrifice for these United States, or anything in between, we are grateful.

A few of our colleagues have shared some of their favorite things they like to whip up in the kitchen when it comes time to celebrate Memorial Day with their friends and family, and we hope you’ll give them a try this weekend!

 

Island Salsa

Kim from our Marketing team has shared a family favorite that she enjoys making.

 

1 15oz can black beans, drained & rinsed

1 bag frozen shoepeg corn

1 - 2 fresh plum tomatoes, diced

1 15oz can petite diced tomatoes w/chilies

1 avocado, diced

1 large red pepper, diced

1 green pepper, diced

1/2 large red onion, diced

1/2 - 1 jalapeno minced very small

2 - 3T minced garlic

3 - 4 limes, juice only

salt to taste

2 - 3 T of olive oil

 

Mix all ingredients in large bowl.

 

Serve with blue corn chips

 

Sweet Baked Kielbasa Sausage

Matt from our sales team shared a different way of preparing the ubiquitous kielbasa in a much more savory dish.

 

Ingredients:

 

2 lbs kielbasa

1⁄3 cup Worcestershire sauce

1⁄2 cup dark brown sugar (light works too)

1 medium onion, chopped

1 dash hot sauce

2⁄3 cup water

 

Directions:

 

Preheat oven to 350*.

Cut Sausage into 2-3 inch pieces.

Combine worcestershire sauce, sugar, onion, hot sauce and water in a flameproof casserole on the stovetop on high heat. Bring mixture to a boil.

Add sausage pieces and transfer to oven.

Bake at 350* for 1 hour.

 

Jalapeño Margaritas

Andrew, also from our sales team, has a refreshing summer cocktail with a fiery bite!

Ingredients:

1/2 cup FRESH-squeezed lime juice

1/2 large green jalapeño pepper, sliced thin

4 ounces silver tequila

1 ounce agave syrup

2 tablespoons sea salt

2 lime wedges for garnish

Directions:

In the bottom of a pitcher, muddle the jalapeño slices with the lime juice. Don't kill yourself, just a dozen times.

Add the tequila and agave, stir until dissolved

Fill two glasses (salt-rimmed or not) and enjoy!
